  • Venison shanks

    Anyone done anything other than grind them? I’ve got two deer’s worth both front and rear I’m thinking of trying something like oso buco or similar.

    The Meateater Osso Bucco recipe with deer shanks is legit. I cut them into 2-3" sections. My family loves it.

    Last week I used deer leg bones and shanks to make pho. Some of the best I ever had, and I have had a bunch.

              Slice across the grain, put them in a cast iron pot in the oven at 425 until they fall apart. Shred and bbq sauce of your choice for chop bbq sandwiches. Surprisingly good.

              Don't try it anything that isn't cast iron or you'll be there all night.

                    My buddy made deer shank tacos at the lease back before Christmas. I had too leave early that day and missed out. Pics and video looked good

                      Im in this camp. Im particular even what I put in grind. Deer are like jack rabbits here. It ain't hard to get another one.

                      Wife wants me to make a spear and stab the bastards. They come on the front porch ever night and eat her flowers.

                        The shanks and the whole neck are honestly the best part of the animal when prepared correctly. I put mine in a crock pot with beef broth and maybe a beer until all the connective tissue melts and its falling off the bone. From there makes excellent tacos pulled bbq or vindaloo as well.

                          I'm making birria today out of a big ol' neck roast off a buck my son shot last week. I have had it on simmering for about 3.5 hours so far and it smells amazing. You could do this with shanks as well.

                              Not really. It takes time to get 'em tender but not much work. Once you try 'em you'll start cutting the shank off a little higher up the hind quarter. At least I do.
