    Been going on down in Port Arthur a long time

    Only ever been there once. It was after a rain out, never went back. I decided I didn't need to be spending my money like that when I wasn't making any that day. Neat place. Bourdain Omelet was good.

                  Per the Googles:

                  "Just like crawfish, boudin traveled across the Sabine River from southwest Louisiana to southeast Texas where some spell it “boudain”. A little research suggests “boudain” isn’t really a spelling error. According to a food etymologist: “Boudain” is the frequently used Texas spelling for “boudin”, the spicy Cajun version in Louisiana. The spelling has an established history in Cajun East Texas, going back to 1965."

                  I was wondering why the different spellings. That page is probably full of crap, though, because they also said:

                  "Texans have also created new and unique ways to eat their boudain. Eating it in a kolache......." Unpossible.

                      I like boudain. I like kolache. I've had them together and it's not good.

                      I also realize a proper kolache should have fruit and not meat
