Are you interested in this being a do all cook trailer? I’ve seen tailgate trailers that have sinks, food prep, wired for various power through a small generator, WiFi through starlink. Flatscreens running in the corner of the ceiling. Obviously a roof because the trailer will become a rally point when dove opener gets inevitably rained out.
Multiple forms of heat like flattop grill, direct heat bbq grill, smoker, frying station, oven….
Water tank and gray water tank. Gray water tank was nice because you didn’t have to worry if you took it to a football parking lot or the like.

it will probably spend 99% of it's time at my house.
But I want roof, off set, santa maria, I have a stainless table that I want them to install. A burner for sure(I hate deep fryers because they are pain in the ass to clean) and I probably won't do flat top because with lack of use it will rust like that's it's main job.
I am going to have them build all of this on a 16' trailer

you could always have them cut some plate that sets on top of your santa maria so you can remove it when you arent using it. Or the burner which is what I do. Although I do agree with your assessment. Flat tops are cool and all but this seems like a project where when done, and the pit gets used, there wont be any real benefit to having a griddle. Steaks, burgers, fajitas etc can go open flame on the SM
